BBQ Shredded Chicken Salad

A protein packed bowl that will brighten any lunch or weeknight dinner


Makes enough for 2-3 salads


Ingredients:

- 1-2 lb chicken breast

- salt, pepper to taste

- 1 TSBP garlic powder

- 1 bag mixed greens (or 3-4 cups lettuce of choice)

- 1 medium cucumber, sliced

- 1/4 red onion, sliced or diced

- 1-2 medium sweet potatoes, diced

- 1-2 TBSP extra virgin olive oil

- BBQ sauce (I go with Stubb's or a local place if we have some)


Optional Adds:

- 1 avocado, sliced

- 2-3 TBSP shredded cheese

- dressing


For the chicken in the slow cooker:

- place 1-2 lbs of chicken into the bottom of your slow cooker

- season with salt, pepper, garlic powder

- cover chicken with just enough water to submerge

- cook on high for 4 hours or low for 7 hours

- drain the chicken of excess liquid and shred with two forks

- transfer to a mixing bowl

- mix shredded chicken with 1 cup of BBQ sauce or more if desired

Store in airtight container, will last for 4-5 days in the fridge.


Roast the sweet potato:

- preheat oven to 425 degrees F and line a small baking sheet with tin foil

- wash and dice sweet potato into evenly sized pieces (the closer the pieces are in size the more evenly they will roast!)

- transfer to a foil lined baking sheet and drizzle with olive oil and a sprinkle of salt, toss to coat

- roast in the oven for 10-15min flipping halfway through or until fork tender and beginning to brown


Assembly:

- layer your greens in the bottom of your salad bowl

- top with sliced cucumber, red onion, roasted sweet potato, and BBQ chicken

- optionally add cheese, avocado, or a drizzle of your favorite creamy dressing (we love Bolthouse Farms Ranch)


*Make Ahead: I recommend making the chicken and sweet potato ahead of time if you're going to use this recipe for a fast lunch or weeknight dinner. Store the chicken and potatoes separately in airtight containers - they will last up to 5 days in the fridge. When you are ready to use you can reheat them the microwave, or my personal favorite the toaster oven before assembling your salad bowl.
