Breakfast Tacos

Delicious little handheld tortillas filled with breakfast glory.


Makes 2 small tacos

Ingredients:

- 2 large eggs + 2 egg whites, scrambled

- 1/4 cup shredded cheese

- 1 slice thick cut bacon*

- 2 small tortillas (we use Mission Carb Balance)

- Salsa or hot sauce for topping


*you can sub the bacon for turkey bacon, turkey breakfast sausage, or canadian bacon


Directions:

  • Add your bacon to a cold pan and cook over medium-high heat until your desired crispy-ness

  • Remove the bacon and carefully wipe the inside of the pan with a paper towel to soak up some of the fat (leave some so your eggs don't stick)

  • Cook your scrambled eggs until no longer runny (2-4 minutes) Add your cheese in the final minute

  • Assemble: top each tortilla with 1/2 slice bacon + 1/2 cheesy egg mixture. Top with your favorite salsa or hot sauce.




PRO TIP: If you'd like to 'make ahead' cook your bacon in advance to save time
