Turkey Burrito Bowls

Meal Prep, Batch Cook


Makes 3-4 servings

Ingredients:

- 1T extra virgin olive oil

- 1lb 99% lean ground turkey

- 1 can beans, drained (I used cannellini)

- 1 can diced fire roasted tomatoes

- 1T garlic powder

- 2T chili powder

- 1T cumin powder

- 1/2T cilantro

- 1tsp salt

- pepper to taste

Bowl Mixings:

- brown or wild rice

- crunchy greens (romaine or cabbage)

- salsa or pico de gallo

- avocado or sour cream

- lime, cilantro


Instructions:

1. Heat 1T of olive oil in a large skillet. Add the ground turkey, season with salt and pepper. Cook through until no longer pink.

2. Open your can of beans and drain liquid (I like to rinse mine). Add the can of diced tomatoes, beans and spices to the skillet with the turkey.

3. Sauté on medium low heat for 2-3 minutes until all the flavors combine.

4. Build your bowl!

5. Store leftovers in the fridge for 3-4 days in an airtight container.
